Make This Wholesome Bean & Halloumi Stew in Just 25 Minutes

As a busy college student, you probably don’t have a lot of time on your hands. Naturally, this would make it difficult for you to find the time to cook. Here is a healthy and wholesome bean and halloumi stew you can make in just 25 minutes.

Ingredients

  • 1 sliced onion
  • 1 sliced red pepper
  • 1 heaped teaspoon coriander
  • 125 grams halloumi cheese
  • 1/2 small bunch of chopped coriander
  • 400 grams mixed beans
  • 400 grams chopped tomatoes
  • 2 crushed garlic cloves
  • 3 tablespoons olive oil
  • 3 tablespoons red chili pesto
  • garlic bread

Instructions:

  1. Place your frying pan over medium heat with 2 tablespoons of oil. Toss in the onion and pepper and cook for 10 minutes. Add the garlic, coriander, and pesto and cook for another minute. Cook for another 10 minutes after adding the beans, tomatoes, and a 1/2 can of water.
  2. Pour the remaining olive oil into a separate pan and place over medium heat. Fry the halloumi for 2 minutes on each side until golden brown.
  3. Spoon the beans into deep bowls. Top with the halloumi and add the coriander. Serve with garlic bread.
