This Nacho Recipe is Perfect for a Get-Together

If you’re hosting friends for food, you’ll be in search of a recipe that is simple, quick, tasty, and sure to be a hit with everyone. Enter this nachos recipe, which uses a vegetable base to boost the nutritional profile of this meal, plus plenty of fantastic flavors in the form of salsa, cheese, and peppers. It can be on the table in under half an hour, so you don’t need to miss out on any of the gossip or fun because you’re cooking.

Ingredients (to serve 6):

  • 2 bags of corn tortilla chips
  • 1 tin of tomatoes
  • 1 white onion
  • 3 sweet potatoes
  • 2 tablespoons of oil
  • 2 cups of fresh spinach
  • Salt and pepper
  • 1 cup of grated cheese
  • 2 tablespoons of jalapeño peppers
  • 1 jar of tomato salsa
  • 1/2 teaspoon of cayenne pepper
  • 1/2 teaspoon of smoked paprika
  • 1 tin of black beans

Instructions:

  1. Finely dice the onion.
  2. Heat the oil in a large saucepan.
  3. Add the diced onion and cook for 4 – 5 minutes.
  4. Add the smoked paprika and cayenne pepper, season with salt and pepper and cook for a further 5 minutes, until the onions are soft.
  5. Add the tinned beans with their liquid and the tomatoes, simmer on a low heat for 20 minutes.
  6. Meanwhile, cube the sweet potatoes and boil them for 10 minutes, until cooked through.
  7. Once the potatoes are cooked, mash them and stir in the spinach until wilted.
  8. Take a large roasting tray, layer the sweet potato and spinach along the bottom. Preheat the oven to 390 degrees F
  9. Top with layers of the tomato-bean mix, tortilla chips, cheese, salsa and jalapeños.
  10. Bake in the oven for 7 – 10 minutes, until the cheese has melted.
