If you’re someone who can struggle to eat enough fruit and vegetables, one quick way round this is to whip up a dish which contains loads of portions of healthy greens. By eating this salad as a side dish (or even as a main, bulked up with some bread or grains) you’ll be enjoying a simple, tasty meal while reaping the benefits of lots of different vitamins and minerals.
Ingredients (to serve 2):
- 1 ripe avocado
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 teaspoon of red wine vinegar
- 1 teaspoon of honey
- 2 cups of fresh salad leaves of your choice
- 1 cucumber, deseeded and sliced into rounds
- 1 apple, cored and cubed into small pieces
- 1 tablespoon of pumpkin seeds
Instructions:
- Peel and de-stone the avocado. Cut the flesh into even strips or cubes.
- In a small bowl, vigorously mix the olive oil, vinegar, honey and salt together until it forms an emulsion.
- In a large salad bowl, combine the salad leaves with the apple and cucumber.
- Add the avocado to the bowl, then pour over the dressing.
- Mix the salad to ensure everything is well coated, and then sprinkle over the pumpkin seeds.
