Check Out This Simple Salad Recipe to Eat All Your Greens in One

If you’re someone who can struggle to eat enough fruit and vegetables, one quick way round this is to whip up a dish which contains loads of portions of healthy greens. By eating this salad as a side dish (or even as a main, bulked up with some bread or grains) you’ll be enjoying a simple, tasty meal while reaping the benefits of lots of different vitamins and minerals.

Ingredients (to serve 2):

  • 1 ripe avocado
  • 1 tablespoon of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of red wine vinegar
  • 1 teaspoon of honey
  • 2 cups of fresh salad leaves of your choice
  • 1 cucumber, deseeded and sliced into rounds
  • 1 apple, cored and cubed into small pieces
  • 1 tablespoon of pumpkin seeds

Instructions:

  1. Peel and de-stone the avocado. Cut the flesh into even strips or cubes.
  2. In a small bowl, vigorously mix the olive oil, vinegar, honey and salt together until it forms an emulsion.
  3. In a large salad bowl, combine the salad leaves with the apple and cucumber.
  4. Add the avocado to the bowl, then pour over the dressing.
  5. Mix the salad to ensure everything is well coated, and then sprinkle over the pumpkin seeds.
