Do you ever have days where you just feel stressed and panicked all of the time? This is a sure sign that your body needs some rest and recuperation, and a great way to start this process is to make sure that you’re eating balanced, nourishing food. This simple soup recipe is tasty, filling and packed full of soothing, balancing nutrients to set you right after a trying day.
Ingredients (to serve 2):
- 1 can of coconut milk
- 1 chilli, deseeded and sliced
- 2 cloves of garlic
- 1/2 of a white onion
- 1 tablespoon of oil
- 1/2 cup of red lentils
- 2 cups of vegetable stock
- 2 cups of fresh spinach, or 1 cup frozen
- Sesame seeds, to top
Instructions:
- Finely slice the onion and garlic.
- Heat the oil in a large sauce pan, and then add the sliced onion and garlic.
- Cook for 10 minutes, and then add the chilli. Cook for a further 2 minutes.
- Add the red lentils, coconut milk and vegetable stock and cook for 15 minutes, until the lentils are soft.
- Add the spinach, allow it to wilt and then remove from the heat.
- Sprinkle over some of the sesame seeds before serving.
