Ingredients:
- 1 cup of quinoa, rinsed
- 2 cups of water or vegetable broth
- 1 tin of chickpeas, drained and rinsed
- 1 cup of cherry tomatoes, halved
- 1 cup of cucumber, diced
- 1/2 cup of red onion, finely chopped
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of fresh mint leaves, chopped
- Salt and pepper to taste
- 1/4 cup of tahini
- 2 tablespoons lemon juice
- 2 tablespoons water
- 1 garlic clove, minced
- 1 teaspoon maple syrup or agave syrup
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let cool.
- In a large mixing bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, parsley, and mint. Toss gently to combine.
- In a small bowl, whisk together the tahini, lemon juice, water, minced garlic, maple syrup, salt, and pepper until smooth and creamy. Adjust the seasoning to taste.
- Pour the lemon-tahini dressing over the quinoa salad and toss until evenly coated. Taste and adjust the seasoning as needed.
- Transfer the quinoa salad to a serving dish or airtight container for transportation to the potluck party. Garnish with additional fresh herbs if desired.
