This is a Great Dish to Take to a Pot Luck Party

When attending a potluck party, bringing a delicious and crowd-pleasing dish can make you the star of the event. Consider preparing a dish that is easy to transport, can be made in advance, and is sure to impress your fellow party-goers. Here’s a great dish to take to a potluck party.

Ingredients:

  • 1 cup of quinoa, rinsed
  • 2 cups of water or vegetable broth
  • 1 tin of chickpeas, drained and rinsed
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cucumber, diced
  • 1/2 cup of red onion, finely chopped
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh mint leaves, chopped
  • Salt and pepper to taste
  • 1/4 cup of tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1 garlic clove, minced
  • 1 teaspoon maple syrup or agave syrup
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine the quinoa and water or vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and let cool.
  2. In a large mixing bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, parsley, and mint. Toss gently to combine.
  3. In a small bowl, whisk together the tahini, lemon juice, water, minced garlic, maple syrup, salt, and pepper until smooth and creamy. Adjust the seasoning to taste.
  4. Pour the lemon-tahini dressing over the quinoa salad and toss until evenly coated. Taste and adjust the seasoning as needed.
  5. Transfer the quinoa salad to a serving dish or airtight container for transportation to the potluck party. Garnish with additional fresh herbs if desired.
